docs: Add "User configuration" section

Stuff like handedness config (once fully implemented, #92), auto-start apps (!239 (closed)), LED/screen brightness (not there yet), maximum headphone volume (not there yet).

Even if stuff is exposed in the UI (already or later down the line) this could go there to save people some searching and be explicit about what features/behavior to expect.
