chore(max30001): Port to new mutex and hw-lock APIs

Using a FreeRTOS mutex directly is deprecated.  Replace it with a
`struct mutex`.  Similarly, the deprecated `hwlock_acquire_timeout()`
is replaced with `hwlock_acquire()`.
